
Refreshing fruit ice block with a cheeky dip of dark chocolate

Ingredients
2 Red Seal Peach & Pineapple Hot or Cold Brew teabags
1 cup hot or cold water
½ pineapple, rind removed and chopped
150g dark chocolate, chopped
¼ cup coconut chips
Instructions
- Brew the tea in the water then remove the teabags.
- Put the tea and pineapple into a blender and blitz until smooth.
- Pour into ice block moulds and freeze overnight.
- The next day, melt the chocolate in the microwave or in a bowl over simmering water. Leave to cool for 10 minutes.
- Prepare a baking paper lined tray that will fit in your freezer.
- Remove the ice blocks from the moulds and dip into the melted chocolate and sprinkle with coconut chips, one by one, before laying on the prepared tray.
- Return to the freezer for 10 minutes to allow the chocolate to harden.
- Store in the freezer in an airtight container or bag.
