Choc Dipped Peach & Pineapple Ice Blocks

2 Red Seal Peach & Pineapple Hot or Cold Brew teabags

1 cup hot or cold water

½ pineapple, rind removed and chopped

150g dark chocolate, chopped

¼ cup coconut chips


  1. Brew the tea in the water then remove the teabags.
  2. Put the tea and pineapple into a blender and blitz until smooth.
  3. Pour into ice block moulds and freeze overnight.
  4. The next day, melt the chocolate in the microwave or in a bowl over simmering water. Leave to cool for 10 minutes.
  5. Prepare a baking paper lined tray that will fit in your freezer.
  6. Remove the ice blocks from the moulds and dip into the melted chocolate and sprinkle with coconut chips, one by one, before laying on the prepared tray.
  7. Return to the freezer for 10 minutes to allow the chocolate to harden.
  8. Store in the freezer in an airtight container or bag.
