Ingredients
Cupcake
- 1 cup plain flour
- 1 1/4 tsp baking powder
- pinch salt
- 2 eggs
- 3/4 cup caster sugar
- 1/4 cup melted butter
- 1/4 cup full fat milk
- 1/4 cup Red Seal Blood Orange hot/cold brew (steeped and cooled)
- 1 tsp vanilla extract
- 1 1/2 tsp vegetable oil
- 12 cupcake liners
Icing
- 150 g softened butter
- 2 cups icing sugar
- 2-3 tbsp Red Seal Blood Orange brew (hot)
- 1/2 tsp vanilla extract
Instructions
Step 1: Preheat the oven to 180C and line a 12x muffin tin with cupcake liners
Step 2: Whisk flour, baking powder and salt in a bowl and set aside
Step 3: In a pot, mix melted butter, milk and Red Seal brew together. Warm gently and set aside to cool.
Step 4: Cream the butter and sugar until light and fluffy. Add the egg and mix until combined.
Step 5: Fold together the flour mixture and the egg mixture until you can't see any flour.
Step 6: Combine the new flour mixture with the milk mixture until a smooth batter forms.
Step 7: Fill the cupcake liners until 3/4 way full and bake in the oven for approx 20 minutes. Leave to cool before icing.
Step 8: Mix together icing ingredients, place icing in a piping bag and pipe onto cool cupcakes. Enjoy.
